  • While the oven is warming up, cook ground beef in a large skillet, braking into crumbles as it cooks. When the beef is no longer pink, drain the grease.

  • Add the tomato sauce, beans, corn, diced chilies, garlic powder, chili powder, and cumin to the pan with the beef. Mix and cook until heated through.

  • Spray a 9x13 inch baking dish with cooking spray. Place 3 tortillas in the pan to cover the bottom. Spoon half of the beef mixture over the tortillas. Top with ½ cup of cheese. Repeat with another layer, finishing with the remainder of cheese on top.

  • Bake for about 25 to 30 minutes, or until the cheese is bubbly and the edges are beginning to brown.

  • Remove the casserole from the oven and let it sit for a few minutes before serving.

Notes

  • You can use ground turkey or ground chicken in place of the beef in this recipe.
