  • 2 celery stalks, finely chopped
  • 3/4 cup mushrooms, finely chopped
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1/2 cup dry white wine
  • 4 cups chicken broth
  • 2 (15 ounce) cans white beans, drained and rinsed
  • 1 bunch lacinato kale, stems discarded and leaves torn
  • Parmesan, for serving
  • Simply Organic Crushed Red Pepper Flakes, for serving

Method

  • Step 1

    Heat the oil over medium-high heat in a large Dutch oven. Use the back of a fork to crumble chorizo into small pieces and cook until it turns brown and crispy, approximately 8-10 minutes.

  • Step 2

    Once done, remove the chorizo using a slotted spoon and set it aside. Pour off all but 2 tablespoons of oil.

  • Step 3
